This is the perfect whole 30 recipe as it is so easy to make and eat. It doesn’t require any heating up and it can be eaten as is! I love to enjoy this chicken salad in a cucumber roll-up or a zucchini roll-up… so tasty!!
All you need for this whole 30 Chicken Salad recipe is 1 pound of shredded chicken, compliant mayo, dijon mustard, garlic powder, celery, grapes, almonds, and cooked bacon (optional).
I almost always cook my chicken in the Instant Pot because I love how moist it comes out and how quickly it takes to cook.
Slice up your grapes and celery and add them a bowl. Cut bacon up into bits and slice almonds. Add to same bowl along with shredded chicken. Add the rest of your ingredients and mix well.
I usually refrigerate for a couple of hours before serving so the flavors have time to blend well. Serve as a side, as your main dish, or as a snack!
- 1 pound shredded chicken
- 1/2 cup mayo
- 1/2 cup celery stalks, sliced thin
- 1 cup red grapes, sliced in half or quarters
- 1/4 cup sliced almonds
- 1 tbsp dijon mustard
- 1/2 tsp garlic powder
- 1/2 cup cooked bacon
- salt to taste
- Combine all ingredients in a large bowl. Mix well.
- Refrigerate for a couple of hours before serving. Enjoy!
